Meal plan + workouts | Week of 2/26/18
I turn 36 this week… so it’s probably time to start drinking more water, eating more kale, applying more wrinkle cream and sleeping eight hours a night. Or whatever. In case that stuff doesn’t work (or… I forget), I’ve got this week’s meal plan + workouts to fall back on.
As I mentioned last week, I’m eliminating high FODMAP foods for the next few weeks, but most of these recipes are, like, perfect for normal people too. All recipes are vegetarian and can easily be adapted to be vegan and/or gluten free.
MEAL PLAN + WORKOUTS | WEEK OF 2/26/18
WORKOUTS
- Monday: Mama Beasts
- Tuesday: Run and row at the Y
- Wednesday: Mama Beasts
- Thursday: TBD (likely run, maybe rest)
- Friday: Row + foam roll at the Cape
- Saturday: Basement workout at the Cape
- Sunday: Rest + foam roll
MEAL PLAN
- Quinoa taboulleh: This is a super easy gluten-free adaptation of taboulleh/tabouli — I like this recipe from Ina Garten, and will use just the green part of the scallion to make it low FODMAP friendly. You can omit the feta to make it vegan.
- Mason jar salads (for lunches + dinners), using some of the great recipes Molly shared with us at our recent MB event (check out her website for even more great ideas!) with this lemon vinaigrette
- Tomato, feta + white bean salad (recipe from The Kitchn)
- Loaded guacamole vegetarian tacos (recipe from Soup Addict): I’ll make a few changes to make this low FODMAP: corn tortillas instead of flour, swap out the black beans for lentils, and begrudgingly omit the onions + garlic, and add some brown rice.
- Vegetarian tortilla soup (recipe from Karlijn’s Kitchen)
- My favorite hummus plate (again, with a few changes) + veggies
Let the reverse aging cycle (or just, you know, solid self care) begin!
