Today: What is this? A Greek salad for ants?!

There are Greek babies.
And then, there are baby Greeks.
Both are adorable, but only the latter is edible. I was looking for a fun, bite-sized appetizer to bring to my parents’ house for Thanksgiving and came up with these little guys.
They were a hit, but I thought they could use a bit more crunch, so for our team’s viewing of The Spirit of the Marathon at our place several weeks ago, I spruced them up a bit with a leaf or two of baby spinach.
Topping for 12 cucumber cups, hollowed with a melon baller or teeny, little spoon: 1 or 2 leaves of baby spinach or other greens, 1 red bell pepper (finely chopped), 1/2 red onion (finely chopped), 1/4 cup carrots (surprise… finely chopped), 2 tsp. Greek dressing, freshly ground pepper and sea salt.
Vegetables taste all the better when bite-sized, and topped with feta. Not only can I whip up a mean appetizer, but I can also rhyme. Please, hold your applause. I embarrass easily.
