Today: Ten minute onion tartlets.

In the spirit of honesty, these onion tartlets take closer to fifteen minutes to make… but ten minutes sounds better.  

Caramelized onion tartlets with feta and thyme

Makes approximately 12 mini tarts, vegetarian (contains dairy and gluten)

Ingredients:

  • 1 medium yellow onion, roughly chopped
  • 1 tbsp. olive oil or butter
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp. fresh thyme leaves
  • 1 package of frozen mini phyllo dough shells (I keep a few packages of these shells in our freezer — they are fully baked and just need to be reheated, a lazy woman’s dream)

Directions:

  1. Remove phyllo shells from freezer and follow directions for thawing (or baking, if necessary)
  2. Heat oil or butter in a large skillet and saute onions for 5-7 minutes, stirring often, until caramelized
  3. Remove onions from heat and add to large bowl with feta and thyme; mix and set aside
  4. Arrange shells on a rimmed baking dish
  5. Fill each shell with the onions, feta and thyme and bake according to package directions (for these, I baked them at 350 degrees F for 10 minutes)

These little guys can be served hot or cold and are one of my favorite appetizers to make and share.  The filling can be made a day ahead of time and refrigerated.  While you’re at it, you may want to make a big batch of caramelized onions (Julie wrote a great “how to” post that includes 16 different ways to use caramelized onions).  

Ten minutes… fifteen-ish minutes… you could probably lie and say these took all day.  But lying is bad.  And these tartlets are good.

Today: Just Add Cooking.

I recently had the opportunity to try a complimentary two-person, three-meal box from Boston-based meal service Just Add Cooking.  In theory, I love to cook… but in reality, I love to cook the same three things over and over.  I often end up eating whatever I whip up for Grace for dinner (fortunately, she has good taste).  

Just Add Cooking provided the perfect opportunity to shake things up a bit… and eat like an adult.

With seven recipes to choose from each week, three of which are vegetarian (so the choice was an easy one for me).  The remaining options usually feature poultry, seafood, pork and beef.  Meals that are designated as gluten-free have been evaluated by a dietitian and are clearly labeled as such, so there’s no second guessing.
My box included everything I needed to make the following meals:
  • Indian Vegetable Curry
  • Vegetable Hash
  • Halloumi Skewers and Couscous
My box was delivered on a Sunday morning, so I carved out some time with my favorite little pajama-clad sous chef and got to work.  Grace loves helping mix and pour ingredients, and asking, “What this is?” about… everything.  
It takes a bit longer for meals to come together, but it’s worth it to hear Grace yell, “More cauliflower!” at Clark later in the day.  
I’ve checked out other meal services before, but never followed through after reading mixed reviews.  Being a local company, Just Add Cooking is able to pack and deliver meals throughout Eastern Massachusetts the same day.  They use couriers instead of shipping services, so packing materials are minimal.  Like… surprisingly minimal.  Everything except the freezer bag is biodegradable.
I loved knowing that the ingredients I received were locally sourced, locally produced, and organic whenever possible.  In addition to detailed recipes (which include a really helpful preparation timeline for people like me who are inclined to wing it… only to burn half of what I make after forgetting to chop the onion or grate the carrots or, like… stop sampling the cheese), Just Add Cooking includes source information about each perfectly portioned ingredient included in each box.
My box included:
  • Spinach from The Kitchen Garden in Sunderland, MA
  • Tomatoes from Long Wind Farm in Thetford, VT
  • Apples from Barden Family Orchard in North Scituate, RI
  • Red potatoes from Maplewood Farm in Portsmouth, RI
  • Cheddar from Grafton Village Cheese Company in Brattleboro, VT
  • Bell peppers from Confreda Greenhouses and Farms in Hope, RI
Because Just Add Cooking took the guesswork out of both meal planning and shopping, I really enjoyed preparing each meal — almost as much as I enjoyed, you know… enjoying them.  Each recipe yielded exactly two portions.  I found cooking on Sunday and reheating during the week to work quite well (life as a lazy pregnant lady at its finest).  
Boxes start at $39 for a two-person, three-meal box (normally $69) and $69 for a four-person, three-meal box (normally $109) for the first box for new customers.  This promotional price will be automatically applied to your first purchase (Just Add Cooking and register by clicking “Get Cooking”).  Subscriptions are flexible, so you can skip weeks whenever you please.  This means I can keep an eye out for weeks when all three vegetarian meals capture my attention (and appetite), without being wasteful on weeks when I’m just not feeling it.
I’m already looking forward to our next delivery.  And I think Grace is, too.

Do you meal plan/prep each week?  Or do you wing it?

Today: Banana muffins with raspberries and dark chocolate.

Alternate title: Organic raspberries were on sale… and I had a bunch of bananas on their way out. So I made muffins.  

These are a bit more dessert than breakfast, which means… they’re delicious at breakfast.

Banana muffins with raspberries and dark chocolate

Makes 12 muffins

Ingredients:

  • 3 very ripe bananas
  • 1 1/2 cups fresh raspberries
  • 1 1/2 cups flour (I used an all-purpose gluten free mix)
  • 1/3 c. butter, melted
  • 1/4 c. sugar
  • 1/4 c. miniature dark chocolate chips
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Directions:

  1. Preheat your oven to 350 degrees F and either grease or line your muffin pan.
  2. Mash bananas in a large bowl (I used a potato masher… worked like a dream).
  3. Add melted butter and sugar.
  4. Add dry ingredients and stir until well combined.
  5. Gently fold in raspberries and dark chocolate chips.
  6. Fill each muffin-cup-thing 3/4 of the way.
  7. Bake for 20 minutes (begin checking at the 15 minute mark and remove from oven when muffin tops have slightly browned).

You can easily replace the raspberries with blueberries, and omit the chocolate… you know, if you’re a terrible person or whatever.*

*Just kidding.  You’re okay, I’m okay, we’re all okay.

Salty or sweet?

 

Today: Six minute hummus plate.

I promise, there is hummus under all that goodness.

When it’s approximately 9,012 degrees out, the last thing I want to do is turn on the oven or serve something hot ‘n heavy to friends and family.  These super easy hummus plates look gorgeous, they’re the perfect way to incorporate all the fresh produce available this time of year, and… they take, like six minutes to make.  

Granted, you could make your own hummus… but that’s more time spent in the kitchen and less time spent floating on a pool noodle.

Six minute hummus plate

Vegetarian, gluten free (contains dairy); Serves 1 pregnant woman named Elizabeth, or up to 6 people… sort of depends on the crowd.  

Ingredients:

  • 1 8 oz. container of hummus (I used a zingy lemon hummus from Whole Foods Market)
  • 1/4 cup crumbled feta cheese
  • 1/2 English cucumber, peeled and chopped
  • 1/2 (small) red onion, chopped
  • 2 (small) sweet bell peppers, seeded and chopped
  • 1 handful cherry tomatoes, halved
  • 1 handful of fresh dill, finely chopped
  • 1 tsp fresh lemon zest

Directions:

  • Minute one: Wash your hands.  Safety first, hummus second.
  • Minutes two-four: Chop your vegetables as instructed above.
  • Minute five: Evenly spread hummus in a shallow serving plate or platter (I used a ceramic tart pan).
  • Minute six: Artfully (or haphazardly, it’s totally up to you) top your hummus with feta, vegetables, dill, a little more feta, and some lemon zest.

It’s summer.  Everything should be this easy.

What’s the coolest thing you’ve ever made with a pool noodle?  I’m personally a big fan of tying one in a knot (so it looks like a pretzel), sitting on it, and pretending I can float upright.  So… there’s that.

 

Today: Dinner at Serafina with Google Express.

On Tuesday night, I did something extra rare: I went out, wore non-workout clothes and stayed up late.  It was such a lovely time!  Google Express treated me and fellow Boston mothers to dinner at Serafina, giving us all a chance to enjoy ourselves while learning about their newly launched service that provides same-day or next-day delivery from local stores and retailers.

From cocktails to valet parking, dinner to a beautifully curated gift basket and vase of flowers, Google Express really treated us.  They even had a professional photographer on hand, so I stashed my camera in my clutch (hallelujah for leaving the diaper bag at home) and just enjoyed myself.  All the gorgeous photos in this post were taken by the talented Briana Moore (thank you!).  Side note: I’m feeling motivated to step up my photography game.  Big time motivated.

The whole event was beautifully designed, but you’ll probably not be surprised that I gravitated first to the flowers.  In addition to an incredible living wall featuring spring roses and orchids, our dining table was lined with centerpieces that reminded me a lot of my bridal bouquet.

I hadn’t been to Serafina before, but I know we will be heading back soon.  It’s just a block from South Station (and a five minute drive from our place) and the food, atmosphere and service were fantastic.  We dined in a private space on the lower level, which I have a feeling would be perfect for a shower or rehearsal dinner.

 

Dinner itself was delicious (and looked as good as it tasted).  I was happily surprised to see the entire menu was vegetarian, and noticed Serafina was great about accommodating special diets and allergies.

By the time dessert arrived, I could only manage a few bites, but that creme brulee was divine.

  • First course: Caprese | Imported Italian fior di latte mozzarella, sliced tomatoes, basil
  • Main course: Ravioli al tartufo nero | Homemade black truffle ravioli, touch of butter
  • Dessert: Creme brulee | With a touch of limoncello

Even better than the food was the company.  During the cocktail hour, I had a chance to catch up with my pals Tina and Alex and loved meeting and chatting with LizSanTara and Kim over dinner.  The event was hosted by Amber of Barefoot Blonde, who shared her experience with Google Express and chose a few of her favorite Google Express items for our adorable parting gift (each basket was personalized with our last names — the event was full of beautiful details like this).

We also received a gift code to try Google Express for ourselves.  I’m having a hard time deciding where to start (there are quite a few retailers in the Boston area to choose from), but I’ve yet to pick up a copy of Go Set a Watchman, so that might be a good start.  I’m sure we’re also running low on diapers… and one can never have too many shades of Essie polish. Right?  Right.

If you could have anything delivered to you door today, what would it be?

Today: Cleaning up at the farmers market, Whole Foods and freshii.

I held off on our grocery shopping this week until we had a chance to swing by our neighborhood’s Farmers Market (on West Broadway on Mondays, 12-6PM — click here to find a farmers market in your ‘hood).  

Clearly someone was excited to get her hands on a summer tomato.

We ended up checking off quite a few items from our shopping list:

  • a pint of grape tomatoes, a head of speckled romaine lettuce, a pint of strawberries and a bunch of asparagus from Freitas Farm
  • a bunch of kale and a half dozen or so tomatoes from Wenger Farm in Bellingham   

After walking back home and unloading our haul (minus the tomato that Grace ate like an apple on the way home, and the half pint of strawberries we shared as soon as we got in the door), we finished up our shopping at Whole Foods Market in the South End.  

  • Dairy: organic whole milk yogurt for Grace, shredded mozzarella cheese, pepper jack cheese
  • Produce: raspberries, blueberries, English cucumber, green apples, garlic, red onion, bananas, carrots, celery, ginger root, grapes, watermelon
  • Staples: quinoa, pearled couscous, canned whole tomatoes, black beans, chickpeas
  • Non-vegetarian things for my non-vegetarian husband: two spicy Italian sausages (basically, this is how I buy meat: I go to the butcher’s counter, have a mild panic attack, point to something and say a random number… in this case, two)
  • Impulse purchase: Caprese salad from the antipasto bar 

After the longest… winter… ever…. during which we ordered more…. pizza… thanweshouldhave… we’ve been making a concerted effort to clean up our meals. Being home and having more flexibility and time to shop, prep and cook has certainly helped, but I think our efforts (and all that sunshine) are definitely paying off.  I’ve been sleeping better, have more energy, and look less zombie-ish (I think).  I’ve kicked my Diet Coke habit (though I did sneak a few sips at my brother and sister-in-law’s cookout after Sunday’s 5k), have fewer sugar cravings, and generally just feel… less like someone who ate too much pizza.

I recently had the chance to check out the new freshii location that opened in the Back Bay this spring.  Freshii generously offered me a gift card for my first visit, and I’ve been back several times (both to the Back Bay and Fort Point locations) since.  It’s so nice to have a convenient and affordable place nearby to stop in for a quick, healthy meal or pick-me-up.  Their juices and salads, in particular, are really fantastic and I love freshii’s commitment to sustainability and their “Mission Green.”

Oh, and their frozen yogurt?  It’s the perfect compliment to all those fruits and vegetables.

And just like that, May is over and June has arrived.  Time flies when you’re having fun.  Or attempting to clean out your closets.  Or making a fresh start.  Or maybe just some fresh juice.

It’s been a week now since I’ve been office-less, business card-less, commute-less and fax machine-less.  I hesitate to call myself (or anyone else, for that matter) a “stay at home mom” because, like… we’ve been out of the house quite a bit since I left my job.  

It currently feels less like a life change and more like a vacation, but I think we’re all settling into this new way of being quite well.  I’m resisting the urge to over-schedule and fill up our days, but I also don’t want us to become weird shut-ins.  It’s all a careful balance (I think.  Who knows?).

Either way, here’s what I’ve been up to…

Reading

  • Per usual, I’m late to the party, but I’m nearly finished reading The Life-Changing Magic of Tidying Up.  There are parts that were so funny (made even funnier by the fact that they were intended to be serious) that I cried.  Overall, though, I think it’s worth a read.  
  • When my mom asked for reading recommendations, I came up empty.  Because I can’t remember the last non-how-to-clean-your-house-book I read.  Not good.  Meanwhile, I was attempting to work some life-changing magic on our bookshelves when I came across an unread copy of J. Courtney Sullivan’s The Engagements.  I loved her first two books and am excited to get started on this.  Magic, indeed!  
  • Oh, and magazines.  They’re like books… for lazy people like me.

Watching

  • Lots of sunrises… because Grace has taken to getting up at 4:30 AM for the day, regardless of how early or late she has gone to bed.  The upside? We suddenly have an extra hour or two to our day (or something).  Our pediatrician recommended we check out this toddler alarm clock.  At first I thought she was kidding… but she hasn’t steered us wrong yet, so into the Amazon cart it goes!

Listening

  • Whitney Houston’s “I Wanna Dance With Somebody.”  It was playing in the Birmingham airport and I have been blasting it in the car ever since.  One of my first tapes was Whitney — I think I need to go Spotify the entire album.

Eating

  • We’re spoiled with Whole Foods just over the bridge in the South End, and a farmers market just around the corner (which opened for the season today!).  I can’t get enough of the early summer produce available — watermelons, berries, corn and tomatoes!

  • Lots of “hers and hers” meals.  Grace shares my love of snacking and enjoys a bit of variety at lunch and dinner.  I saw these adorable stainless steel divided bus plates on Peas and Crayons (thanks, Jenn!) and ordered a set for Grace.  They are perfect for plating toddler-sized portions of whatever I happen to be snacking on.  

Making

  • Progress on my “stuff to do around the house” list (how domestic, I know).  I’ve been adding to that list since we moved, but barely but a dent into it until this week.  So far, I’ve cleaned out my closet (three bags of clothes went to the Red Cross, and fourth went to ThredUp — we shall see how that goes), hung up our new artwork from Minted, packed up Grace’s 6 and 9 month clothes, cleaned out the super-cluttered, super-dangerous (mandolins!  knives!) kitchen utensil drawer, and purged most of our kitchen cabinets.  Next on the list: Change our wifi network name to Hillary Clinternet (this is a major priority), recycle every single scrap of paper in the house, find a new rug for the living room, make order out of the chaos that is our bathroom cabinet, and wrangle all those books and toys.

Feeling

  • Like this is going to be a really great summer.

Today: Snowed in take-out (+ a Blue Dragon giveaway).

Unless you’re living somewhere especially remote (and maybe especially tropical), you know that it’s snowing in Boston.  And not just in a normal, Oh, it’s winter! sort of way.

We’ve run out of places to put the snow, but it keeps on falling. Our public transportation system effectively shut down at 7 o’clock last night (a few buses are running, but no trolley, subway or commuter rail service) and hasn’t reopened.  Schools are closed.  Again.  My office building is closed.  Again.  Day care is closed (I’ll take all the family QT I can get).  And there’s a happy Yeti roaming the streets.

All things considered, we’re faring pretty well.  [Side note: I think this article, A Blizzard of Perspective, is well worth a read.] We have a safe, warm home, reliable tank-like transportation (snow tires 4 life), a stockpile of necessities (diapers, water, hot pink MagLites and batteries, tea and salty snacks), and, you know, one another.

Oh and food. This weather just begs for comfort food.

Is it me, or does being snowed in make us all extra hungry and a tiny bit lazy?  Forget the Freshman 15, I’m working on the Snowmageddon 15.  Just kidding.  Kind of.

With the roads so messy, we can’t really order delivery in good conscience, so we’ve been enjoying some take out favorites at home, thanks to Blue Dragon and the generous package of goods they send our way.

I think this was my first time cooking with a wok, which Blue Dragon kindly sent me along with their delicious sauces, noodles, and rice paper wraps.  Whipping up dinner was so quick and easy. I know we’ll be coming back to these recipes and sauces for busy mid-week dinners.

Today: Game changing snacks.

Our hometown team is playing in the big game this weekend and all this talk of, well… deflated balls has distracted from what really matters: the food.  

My friends at Blue Diamond Almonds recently sent me two of their tastiest flavors to incorporate into some game-worthy snacks.  Whether you’re heading to Arizona (please take me and all three feet of snow with you) or hosting friends at home, I hope you’ll enjoy these simple, but delicious snacks.  

Smoky almond and black bean dip

I had never thought to add almonds to my favorite vegetarian dip, but I love the warm, smoky flavor they add.  

Ingredients:

  • 1 can of organic black beans, rinsed and drained
  • 1/2 cup of Blue Diamond Smokehouse almonds
  • 1/2 red onion, chopped
  • 1/4 cup fresh cilantro
  • 2 cloves of garlic
  • Pinch of cumin
  • Salt and pepper to taste

Directions:

  1. Um… put everything in the blender and pulse.
  2. Garnish with a few chopped almonds and serve with fresh vegetables or tortilla chips.

Vegetable dumplings with Wasabi & Soy Sauce almonds

This recipe is a tiny bit more involved, but still easy (I promise).  It makes 6 dumplings and can easily be doubled… or tripled… or whatever.  I chose to quickly pan fry my dumplings, but you might consider baking or steaming them.

Ingredients:

  • Wonton wrappers
  • Your choice of finely chopped vegetables (I used what I had on hand: shredded carrots, sugar snap peas, mung bean sprouts, red bell peppers, green onions), approximately 2 cups
  • 1/4 cup of Blue Diamond Wasabi & Soy Sauce almonds, chopped
  • Splash of liquid aminos (or soy sauce)
  • 1 tsp. coconut oil (or olive oil)

Directions:

  1. For the filling: in a bowl, combine vegetables, almonds and liquid aminos
  2. Add a small amount of filling to the center of each wonton wrapper
  3. Carefully fold each wrapper in half and seal the edges with water
  4. In a hot skillet or frying pan, cook dumplings (two at a time) in coconut oil, flipping until each side is browned.
  5. Serve with liquid aminos or soy sauce for dipping.

Simple, easy and uncomplicated.  That’s how I like my game time snacks.  As for the game itself, well… complicated is interesting, right?

What are you whipping up for Sunday?

Today: Ginger and mint lemonade.

I’m one of those people whose feelings end up in their stomach.

If I’m feeling nervous, excited, anxious, worried, anxious, afraid, unsettled, or irritated, my stomach has its own corresponding dance.  Your feelings may turn into headaches or that weird eyelid twitch, but regardless, our emotional things almost always manifest themselves as physical things.

With so much to see and do and wrap and taste and smell and feel (so much exciiiiiitement!) during the holiday season, I start to notice a pattern of my stomach feeling off more days than it’s on.  Once I’ve spent at least an hour on WebMD ruling out a very rare and very deadly parasite, I find that a cup of tea and little quiet time often does the trick.

When that’s not enough, I hit up nature’s medicine cabinet.  

Side bar: That would be such a cute name for a store. I would sell flowers and tea and make people happy. Except… never mind… “nature’s medicine cabinet” might be the name of a medical marijuana dispensary I saw on 60 Minutes.  Who knows.  

Back on topic: A little ginger, some citrus, a bit of mint… et voila

Ginger and mint lemonade - a delicious and refreshing drink perfect for soothing upset stomachs

Ginger and mint lemonade

While this ginger and mint lemonade serves as a fantastic stomach soother (and it’s sort of the perfect antidote the entire bowl of M&Ms I ate last night), it’s just as delicious and refreshing on those days when all is right in your world and in your body.

Oh, and (you know this already): Numbers are not my strong suit, so don’t worry too much about measuring.  As with just about every recipe I share, you’ll get by with some good estimating and tasting along the way.

Recipe yields approximately 4 servings and will keep refrigerated for up to 5 days

Ingredients:

  • 1/4 cup loose mint tea leaves (I used organic spearmint from David’s Tea)
  • 1/3 cup freshly chopped ginger
  • 1/3 cup agave nectar
  • 2 cups boiling water
  • 1/3 cup freshly squeezed lemon juice (approximately 2 lemons)
  • 1 1/2 cups cold water
  • Ice cubes
  • Lemon slices for garnish

Directions:

  1. Mix tea leaves, agave nectar and grated ginger in a large bowl.
  2. Add boiling water and allow mixture to steep for 30 minutes.
  3. Strain tea mixture using a fine mesh strainer* into a large measuring cup (or bowl with a pouring spout thing) and press firmly to extract as much liquid as possible.
  4. Add lemon juice and cold water.
  5. Divide and store in covered glass jars.
  6. Refrigerate and shake well before serving.

*As you can see in the photo above, I used a fairly loose strainer and some errant tea leaves snuck in (all good in my book).  If you’d prefer to not have the feeling that something’s stuck between your two front teeth all day, I recommend a fine mesh strainer for Step 3.
